Butter beans provide a hearty base for this meatless dinner, thanks to their fiber and plant-based protein. Earthy mushrooms add a deep, savory flavor, and cream cheese and Parmesan make the sauce rich and creamy. A little Dijon mustard and lemon zest brighten each bite. The whole-wheat baguette on the side is perfect for scooping up every last bit of the skillet.

Don’t let the name fool you: This vibrant green soup is a comforting mix of spinach, white beans, chicken and brown rice. Blending the spinach into the broth gives it a smooth texture and its signature green color. The beans and rice help each serving deliver an impressive 8 grams of fiber. I’ll finish the meal with a clementine for something sweet and a boost of vitamin C, which supports healthy immune function during cold and flu season.

Tuesday: Thai Red Curry with Cod & Sweet Potatoes

This coconut-milk curry is just the kind of warming dinner I want on a chilly evening. Sweet potatoes and green peas add fiber and antioxidants that may help reduce inflammation. Ginger, red curry paste and a Thai chile build layers of flavor. The recipe calls for black cod, also known as sablefish, which has a buttery texture and provides omega-3 fats. Plus, everything cooks in one pot, making cleanup a breeze.

Wednesday: Pierogi Sheet-Pan Supper

By midweek, I’m ready for a dinner that keeps prep to a minimum. This sheet-pan meal puts frozen pierogies, chicken sausage and a pepper-and-onion medley to good use. The vegetables add color and fiber, and roasting them brings out their sweetness and caramelizes the edges. A smoky paprika-sherry vinaigrette gives the dish a tangy finish.

White beans are one of my favorite ways to make a pasta dinner more satisfying. In this skillet, they team up with whole-wheat orzo for extra fiber, and chicken helps bring the protein to an impressive 47 grams per serving! Cream and Pecorino Romano create a rich, savory sauce balanced by a squeeze of lemon juice.

Friday: Black Bean-Potato Enchilada Casserole

A cheesy casserole feels like a fitting way to welcome the weekend. This one layers corn tortillas with potatoes and black beans for a fiber-rich dinner that also provides heart-healthy potassium. Red enchilada sauce adds bold flavor, while pepper Jack cheese melts over the top. I love that layering everything in a baking dish means there’s no need to roll individual enchiladas.
I wish you all a great week, and I hope you enjoy this dinner plan. If you try a recipe, remember to add a review.
